Patsy and I are on vacation at my family’s lake-house in Maine. It’s pretty cold up here but beautiful and quiet, and we are having a wonderful time. We spent most of the day today cooking. I made dinner – a fish chowder (turned out especially well, perfect for my slightly-sore throat) and anadama bread (a little too salty maybe, we couldn’t find dad’s recipe so we improvised.) Patsy is making a blueberry pie right now…

    They say the secrets are 1. let the cornmeal mush stand overnight, and 2. use blackstrap molasses. I agree that those made an excellent loaf, but they’re not necessary.

    I generally use 2 tsp to 1 tbsp of salt for a recipe making 2 loaves of bread.

  2. Yeah, I think the problem was that the recipe we used was for one loaf, not two, so our salt proportions were weird. I discovered your recipe in the recipe-box too late, it was (literally) over my head! :)
